Classic Lemon Curd - cooking recipe
Ingredients

4 None eggs, at room temperature
1/3 cup granulated sugar
1/2 cup lemon juice
2 tsp lemon zest
1/2 cup butter, chopped
Preparation

Whisk together eggs and sugar in a medium, heatproof bowl. Place over a double boiler and whisk constantly for 1-2 mins, until sugar dissolves. Whisk in lemon juice, lemon zest and butter. Continue whisking for 15-20 mins, until smooth and mixture thickens to coat the back of a wooden spoon.
