Almond And Cherry Cake - cooking recipe

Ingredients
    370 g cherries in syrup, drained
    75 g Amarettini biscuits, coarsely chopped
    200 g butter or margarine
    175 g sugar
    1/2 tsp vanilla extract
    3 None medium eggs
    100 g ground almonds
    300 g plain flour
    2 tsp baking powder
    5 tbsp milk
    125 g icing sugar
    1/2 tsp red food colouring
    1/2 None lemon, juiced
    None None chocolate hearts for decoration
Preparation
    Preheat oven to 400\u00b0F. Grease and flour a 9 x 5 inch loaf pan. Cream butter, sugar and vanilla extract until light and fluffy. Add eggs, 1 by 1, then add almonds, flour, baking powder and crushed cookies, alternating with milk. Fold cherries into batter then transfer to prepared pan. Bake for about 1 hour. Remove from oven and allow to cool on a wire rack for about 10 mins. Meanwhile, mix powdered sugar with lemon juice and food coloring. Remove cake from pan and spread pink icing over top. Decorate with chocolate hearts.
