Pasta With Broccoli And Mushroom Sauce (Diabetic) - cooking recipe

Ingredients
    1/4 lb broccoli, broken into florets (about 1 1/3 cups)
    2 1/8 oz dry pasta
    1 tbsp oil
    1/4 lb mushrooms, sliced
    2 None spring onions, sliced
    1 tbsp sour cream
    1 tbsp Parmesan cheese, grated
Preparation
    Cook the broccoli in 1/2 cup boiling salted water for about 8 mins. Drain, reserving the cooking water. Cook the pasta according to the packet instructions.
    Heat the oil in a pan, fry the mushrooms and spring onions. Stir in the broccoli cooking water and bring to a boil, then stir in the sour cream and season. Add the broccoli to the sauce. Serve with the pasta, sprinkled with the Parmesan.
