Warm Rice And Chickpea Salad - cooking recipe
Ingredients

1 cup rice
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup raisins
1/4 cup dried apricots, chopped finely
2 None green onions, thinly sliced
2 tbsp toasted pine nuts
None None FOR THE BALSAMIC ORANGE DRESSING
1 tsp finely grated orange peel
1/3 cup orange juice
1 tbsp balsamic vinegar
1 clove garlic, crushed
1 piece (1/4 inch) fresh ginger, grated
Preparation

Combine rice and 1 3/4 cups water in medium heavy-bottomed saucepan; bring to a boil. Reduce heat to low; simmer, covered, about 12 mins or until rice is tender. Remove from heat. Let stand, covered, for 10 mins. Fluff rice with fork.
Meanwhile, for the balsamic orange dressing, whisk all ingredients in a small bowl.
Place rice in large bowl with remaining ingredients and dressing; toss gently to combine.
