Citrus Cheesecake - cooking recipe
Ingredients

100 g homemade or bought tuille biscuits
50 g unsalted butter, melted
1 None orange, finely grated zest
4 sheets leaf gelatine
250 g cottage cheese
150 ml yogurt
150 g mascarpone cheese
2 tbsp lemon juice
75 g caster sugar
150 ml double cream
1 None red grapefruit
Preparation

Combine finely ground graham crackers, butter and orange zest. Pack down firmly into an 8 inch springform pan. Chill.
Meanwhile, press cottage cheese through a fine-mesh strainer into a bowl. Add yogurt, mascarpone, lemon juice and sugar. Combine heavy cream and bloomed gelatin and heat gently until gelatin melts. Fold into cottage cheese mixture then transfer to prepared pan and chill for 2-3 hours, or overnight, until firm.
Loosen edges of cheesecake and remove from pan. Decorate with grapefruit slices. Crumble reserved graham cracker and sprinkle over top.
