Salami And Ricotta Pizzas - cooking recipe

Ingredients
    2 x 12 inch pizza crusts
    1 x 14 oz can crushed tomatoes
    1 tsp brown sugar
    12 oz mozzarella, shredded
    3.5 oz pitted kalamata olives, sliced
    2 None Japanese eggplants, thinly sliced diagonally
    5.25 oz mild salami, thinly sliced
    9 oz ricotta
    1/3 cup basil leaves
    7 oz mixed salad greens, to serve
Preparation
    Preheat oven to 450\u00b0F. Place pizza crusts on 2 large baking sheets. Combine tomatoes and sugar in a small bowl. Stir to dissolve sugar. Spoon tomato mixture evenly over crusts, crushing lightly with the back of a spoon.
    Sprinkle crusts with half the cheese, then top with olives, eggplant, and remaining cheese. Add salami and bake for 10 mins.
    Sprinkle with ricotta. Bake for 2-3 mins more or until ricotta is just heated. Remove pizzas from oven. Sprinkle with basil and pepper. Serve with salad.
