Plum, Meringue And Orange Cream Parfaits - cooking recipe

Ingredients
    2 lbs plums, halved, destoned
    1/4 cup sugar
    2 cups heavy cream, whipped
    1 tbsp powdered sugar
    2 tsp finely grated orange zest
    1 tbsp orange juice
    3 oz meringues, crushed
Preparation
    For the plums, preheat oven broiler to hot. Place plums, cut-side up, in a shallow-sided roasting pan. Pour in 1/3 cup water and sprinkle plums with sugar. Broil until browned lightly. Cool.
    Meanwhile, for the orange cream, combine the whipped cream, powdered sugar and orange zest and orange juice in a bowl.
    To assemble, layer crushed meringues, orange cream and plums in glasses. Drizzle with plum syrup from pan and serve.
