Bacon, Tagliatelle And Sage Fritatta - cooking recipe

5 oz tagliatelle verdi
2 tbsp olive oil
6 oz bacon, chopped
3 tbsp sage, chopped
6 None medium eggs
3 oz mature Cheddar cheese, grated

Bring a large pan of lightly salted water to a boil and cook the tagliatelle for 4-5 minutes until just tender. Drain.
Heat the oil in an 8-inch broiler-safe frying pan and cook the bacon over high heat for 3-4 minutes until golden. Add the sage and drained tagliatelle and toss well to mix.
Preheat broiler to medium. Beat the eggs well and season to taste. Reduce heat to low and pour the egg mixture into the pan. Sprinkle with the grated cheese and cook over gentle heat for 5-6 minutes until the base is set.
Place the pan under the broiler and cook 5-6 minutes, until the eggs are set and the cheese is golden. Serve hot.
