Breaded Trout With Zesty Peas And Fava Beans - cooking recipe
Ingredients

1 lb fava beans
4 tbsp butter
1 None onion, finely diced
3/4 lb frozen peas, defrosted
None None zest and juice of 1/2 lemon
2/3 cup sour cream
4 None trout fillets
4 tbsp all purpose flour
2 None eggs, beaten
1/2 cup breadcrumbs
Preparation

Cook the beans in salted, boiling water for 3-4 mins. Drain and refresh under cold water then peel away the pods.
Heat 1 tbsp of butter in a saucepan, add the onion and saute for 2-3 mins. Add the peas, fava beans and lemon juice and saute for 2-3 mins. Stir in the sour cream and simmer for a further 2-3 mins. Mix in the lemon zest and season.
Season the fish then dust with the flour. Dip the fish in the beaten eggs then in the breadcrumbs and turn to coat. Heat the remaining butter in portions and saute the fish in batches, if necessary. Cook for 5-6 mins, turning halfway through, until golden. Divide the fish and vegetables between 4 plates and serve.
