Sesame Chicken Schnitzel - cooking recipe

Ingredients
    4 None chicken breast fillets, pounded thin
    1 1/2 cups fresh breadcrumbs
    1/4 cup sesame seeds
    1/4 cup grated Parmesan cheese
    2 tbsp chopped fresh parsley leaves
    1/2 cup all-purpose flour, for dusting
    2 None large eggs, lightly beaten
    2 tbsp olive oil
    4 None potatoes, chopped, par-boiled
    1 None red onion, finely sliced
Preparation
    Preheat oven to 350\u00b0F. Line a baking tray with parchment paper.
    Combine breadcrumbs, sesame seeds, Parmesan and parsley in a shallow dish. Dust each chicken breast with flour, dip into egg then coat in breadcrumb mixture. Place on prepared tray, cover and chill for 20 mins.
    Bake chicken for 30-35 mins, until golden and cooked through.
    Meanwhile, heat olive oil in a frying pan over medium heat. Cook potatoes for 3-5 mins, until starting to brown. Add red onion and cook for another 3-5 mins, until potatoes are golden and onion is soft. Season to taste. Serve with chicken schnitzel.
