Cheese Breadsticks - cooking recipe

2/3 cup grated Parmesan
1/2 cup grated Cheddar
1/2 cup (1 stick) butter, at room temperature, diced
1 None large egg
1/3 cup all-purpose flour
1/4 tsp cayenne pepper
2 tbsp snipped fresh chives
Preparation

Preheat oven to 350\u00b0F. Line two large baking sheets with parchment. Place cheeses and butter into a bowl. Using fingertips, rub together. Mix in egg.
Sift flour and cayenne pepper into cheese mixture. Add chives and mix with a wooden spoon until dough just comes together.
Turn dough on to a lightly floured surface. Knead until smooth. Wrap in plastic and chill until firm enough to handle. Divide into 8 portions and roll into long sausage shapes. Cut into 4-5-inch lengths. Arrange on prepared baking sheets.
Bake for 15-20 mins, until golden. Cool on trays for 5 mins before transferring to a wire rack to cool completely. Will keep in an airtight container for up to 4 days.
