Ingredients

2 1/3 cups flour, sifted
1 pkg (1/4 oz) active dry yeast
1 tsp sugar
1 tsp salt
1 tbsp olive oil, plus additional, for drizzling
1 large clove garlic, finely chopped
6 oz mini mozzarella balls, drained, sliced
7 oz mixed mushrooms, such as cremini, shiitake, enoki, sliced or whole
Preparation

For the pizza dough, combine flour, yeast, sugar and salt in a bowl. Stir in 1 cup warm water and half the oil. Stir with a wooden spoon until too firm to continue. Work by hand into a ball, then turn out onto a floured surface.
Knead until smooth and elastic. Brush a large bowl with remaining oil and place dough in it, turning to grease all over. Cover with plastic wrap, then a tea towel. Let stand in a warm place for 1 hour, or until doubled in size.
Preheat the oven to 450\u00b0F. Grease 2 pizza pans or baking pans.
Punch down dough and turn out onto a lightly floured surface. Knead lightly, halve and pat out each half to a 12-inch round. Place on pans. Gently press, pat and push dough outwards until it reaches edges, forming a thick rim.
Top crusts with garlic, mozzarella and mushrooms. Drizzle with a little olive oil and season. Bake for 15 mins, or until cheese is bubbling and golden.
