Barbecue Spare Ribs - cooking recipe

2 1/3 cups tomato sauce
1 1/2 cups cider vinegar
1/3 cup olive oil
1/2 cup Worcestershire sauce
3/4 cup firmly packed brown sugar
1/3 cup yellow mustard
1/2 tsp cracked black pepper
3 None fresh small red Thai chili peppers, finely chopped
3 cloves garlic, crushed
1/4 cup lemon juice
7 1/2 lbs pork spare ribs

For the barbecue sauce, bring all the ingredients, except the ribs, to a boil in a medium saucepan. Remove from the heat and allow to cool.
Brush both sides of the ribs with the barbecue sauce. Place in large deep roasting pan. Pour the remaining sauce over the ribs. Cover and refrigerate overnight, turning the ribs occasionally in the sauce.
Preheat the oven to 300\u00b0F.
Drain the ribs and reserve the sauce. Place the ribs on 2 wire racks over 2 large shallow baking pans. Roast, covered, for 1 1/2 hours. Brush with the sauce every 20 mins. Turn the ribs halfway through cooking time.
Increase the oven temperature to 425\u00b0F. Uncover the ribs and roast, brushing frequently with the sauce, until ribs are browned and cooked through, turning after 15 mins.
Place the remaining barbecue sauce in a small saucepan and bring to a boil. Reduce the heat to low; simmer, stirring, for about 4 mins or until the sauce thickens slightly. Using scissors, cut the ribs in portions of 2-3 ribs. Serve the ribs with hot sauce.
