Caraway Pork With Roast Apple And Red Onion - cooking recipe

Ingredients
    1 1/2 tsp mild paprika
    2 1/2 tsp caraway seeds
    4 None boneless pork chops (4 oz each)
    2 None apples, peeled, cored, each cut into 8 wedges
    2 medium red onions, each cut into 12 wedges
    2 cloves garlic, chopped
    1 tbsp vegetable or olive oil
    2 tsp balsamic vinegar
    1 tbsp lemon or lime juice
    1 tbsp chopped parsley
    None None Baby arugula leaves, to serve
Preparation
    Combine paprika and 2 tsp of the caraway seeds in a small bowl. Rub evenly over pork. Season with salt and pepper. Place pork on a plate. Cover with plastic wrap; refrigerate 10 mins to marinate.
    Preheat the oven to 350\u00b0F. Line a small roasting pan with parchment paper.
    Combine apple, onion, garlic, oil, 1 tsp of the vinegar and remaining 1/2 tsp caraway seeds in a medium bowl. Place in prepared pan.
    Bake 45 mins, stirring twice during cooking, or until apple and onion are tender.
    Preheat a grill pan or large skillet on medium-high heat. Cook pork 3 mins each side, or until cooked through. Transfer to a heatproof plate. Cover with foil; let stand 5 mins.
    Whisk remaining 1 tsp vinegar and lemon or lime juice in a small bowl.
    Spoon roast vegetables onto serving plates; top with pork. Drizzle with juice mixture; sprinkle with parsley. Serve with arugula.
