Red Pepper And Onion Focaccia - cooking recipe

Ingredients
    1/4 cup vegetable or olive oil + 2 tbsp
    2 None red onions, thinly sliced
    1 tbsp brown sugar
    1 None red bell pepper, deseeded, thinly sliced
    1/2 tsp granulated sugar
    1 clove garlic, minced
    2 1/2 tsp active dry yeast
    2 1/4 cups all-purpose flour
    3.5 oz feta cheese, crumbled
    2 tbsp fresh basil leaves
Preparation
    Preheat oven to 350\u00b0F. Lightly grease a 12x8 inch rimmed baking dish.
    Heat 2 tbsp oil in a large frying pan over medium heat. Sweat onions for 8 mins, or until soft. Add brown sugar and pepper. Cook, stirring, for 8 mins, or until caramelized.
    Meanwhile, combine granulated sugar, 1 tsp salt, garlic, yeast, flour, remaining oil and 3/4 cup warm water. Turn dough out onto a floured surface and knead for 5 mins, or until smooth. Press into prepared pan and lightly coat with oil.
    Top with onion mixture and feta. Bake for 20-25 mins, or until browned. Sprinkle with basil. Serve.
