Breaded Pork Chops With Garlic Mayo And Smashed Potatoes - cooking recipe

1 1/4 lb baby new potatoes
4 cloves garlic, unpeeled
3 tbsp fresh parsley leaves, finely chopped
1/4 cup fresh chives, finely chopped
4 None boneless pork chops, halved, pounded thin
1/3 cup all-purpose flour, seasoned
2 None eggs, lightly beaten
1 1/4 cups fresh breadcrumbs
None None vegetable oil, to shallow-fry
1/2 cup mayonnaise
Preparation

Preheat oven to 400\u00b0F.
Cook potatoes in boiling, salted water for 8-10 mins, until just tender. Drain. Smash then place on a baking tray along with garlic. Drizzle with oil and season. Bake for 15-20 mins. Toss with herbs then bake for another 5 mins.
Reduce oven temperature to 300\u00b0F. Dredge pork chops in flour, shaking off excess. Dip in egg then coat with breadcrumbs. Chill for 10 mins.
Heat oil in a frying pan over high heat. Fry pork for 2-3 mins per side, until golden and cooked through. Drain on paper towels. Keep warm in oven.
Peel garlic. Mash with mayonnaise and season.
Serve chops with garlic mayonnaise and smashed potatoes.
