Cucumber And Cheese Sandwiches - cooking recipe

Ingredients
    2 None cucumbers, peeled, seeds removed and diced
    1/2 tsp salt
    75 g runny honey
    100 g butter, softened
    12 slices wholemeal bread, crusts removed
    300 g light Cheddar, grated
    4 sprigs fresh flat-leaf parsley, finely chopped
Preparation
    Sprinkle the cucumber with the salt and let stand for 20 mins.
    Mix the honey and butter and spread on the bread. Drain the cucumber in a sieve and pat dry with paper towels. Spread on 6 slices bread. Top with the cheese. Press the remaining bread slices on top. Cut sandwiches in half diagonally. Sprinkle with parsley.
