Apple, Pork And Prune Casserole - cooking recipe

Ingredients
    2 tbsp vegetable oil
    2 None small leeks, thinly sliced
    4 (12.5 oz) pork chops, trimmed, cut into 2 inch pieces
    3 tbsp all-purpose flour
    4 cups chicken stock
    3.5 oz white long-grain rice
    4 None medium apples, thickly sliced
    6 oz pitted prunes
    2 tbsp coarsely chopped fresh sage leaves
Preparation
    Preheat oven to 350\u00b0F.
    Heat 1 tbsp oil in a large Dutch oven over medium heat. Cook leeks, stirring, until soft then remove from pan.
    Coat pork in flour, shaking off excess. Add remaining oil to pan and cook pork until browned all over. Return leeks to pan along with stock. Cover and transfer to oven to bake for 45 mins.
    Remove pan from oven and skim off any fat. Stir in rice, apples, prunes and 1 tbsp sage. Cover and return to oven for 20 mins, or until pork and rice are tender. Season to taste.
    Serve casserole sprinkled with remaining sage.
