Homemade French Fries - cooking recipe

Ingredients
    2 1/4 lbs baking potatoes, peeled and cut into chunky matchsticks
    None None oil, for deep-frying
    None None flaked sea salt, to serve
Preparation
    Pat potatoes dry with paper towel. Heat oil in a large saucepan or deep-fryer to 275\u00b0F, or until a small piece of potato sizzles as soon as it is added. Cook potatoes, in 3 batches, for 5-6 mins, or until they just start to color. Drain on paper towel and cool 10 mins.
    Reheat oil to 350\u00b0F. Fry the potatoes again, in 2 batches, for 3-4 mins, until crisp and golden. Drain on paper towel, season with sea salt and serve.
