Lemon Chicken Tacos - cooking recipe
Ingredients

1/2 tbsp smoked paprika
1/2 tbsp ground cumin
1 tbsp mustard powder
1 tsp ground turmeric
2 None chicken breasts, trimmed, halved horizontally
1 tbsp olive oil
2 None spring onions, cut into matchsticks + 1 extra, finely chopped
2 tbsp fresh cilantro, coarsely chopped
1 tsp lemon zest
2 tbsp lemon juice
1 None large carrot, peeled, coarsely grated
4 leaves iceberg lettuce, shredded, to serve
6 None taco shells, warmed, to serve
None None sour cream, to serve
None None guacamole, to serve
None None salad, to serve
None None lemon and lime wedges, to serve
Preparation

Combine spices. Coat chicken in spice mix then drizzle with oil. Cover with plastic wrap and marinate for 30 mins.
Meanwhile, place onion matchsticks in a bowl with ice water. Chill for 30 mins, until curled.
Preheat a grill pan over medium-high heat. Cook chicken for 4-5 mins per side, until browned and cooked through. Let rest, covered, for 5 mins. Thinly slice. Combine with cilantro, lemon zest, lemon juice, extra onion and carrot. Season.
Layer lettuce and chicken in taco shells. Top with sour cream and onion curls. Serve with guacamole, salad and lemon and lime wedges.
