Vietnamese Carrot Pickle - cooking recipe

Ingredients
    1 clove garlic, crushed
    1 None fresh long red chili pepper, finely chopped
    1/4 cup lime juice
    1/4 cup fish sauce
    1/4 cup grated palm sugar or brown sugar
    1 medium carrot, coarsely grated
Preparation
    Combine all ingredients and 1/2 cup water in a medium bowl. Season to taste.
