Strawberry And Orange Tarts - cooking recipe

Ingredients
    2 sheets pie dough, cut into 8 - 4 inch discs
    1 cup butter, diced
    1 1/4 cups granulated sugar
    2 None oranges, zested and juiced
    4 None egg yolks
    1/2 lb strawberries, chopped
    None None fresh mint leaves, to decorate
Preparation
    Preheat oven to 400\u00b0F. Lightly grease a 12-cup muffin pan. Line with pie dough. Prick bases and bake for 10-15 mins, until golden brown. Let cool.
    Meanwhile, combine butter, sugar, orange zest and orange juice in a heatproof bowl over a double boiler. Whisk until smooth. Add egg yolks and continue whisking over double boiler for 8-10 mins, until mixture thickens.
    Pile strawberries into prepared pie shells. Drizzle with orange curd. Decorate with mint leaves.
