Chicken And Cilantro Noodle Soup - cooking recipe

Ingredients
    14 oz boneless skinless chicken breasts
    1 tsp grated ginger, plus 1 tbsp finely chopped
    7 oz egg noodles or udon noodles
    1 1/2 cups chicken stock
    2 None green onions, finely chopped
    1/3 cup chopped cilantro
    None None Light soy sauce and roasted sesame oil, to serve
Preparation
    Place the chicken, grated ginger and 3 cups water in a large saucepan on medium heat. Bring to a simmer and poach for 6 mins, until chicken is cooked through. Remove the chicken, reserving the liquid, and allow to cool slightly. Shred the chicken and set aside.
    Prepare the noodles according to the package directions. Drain and divide among 4 bowls.
    Add the stock to the cooking liquid and bring to a boil. Top the noodles with chicken, chopped ginger, onion and cilantro. Ladle the stock over the top. Drizzle with a little soy sauce and sesame oil and serve.
