Baked Beans - cooking recipe

Ingredients
    1 tbsp vegetable or olive oil
    1 None small onion, finely chopped
    1 clove garlic, minced
    2 slices bacon, chopped
    2 tbsp tomato paste
    13.5 oz can diced tomato
    1 tbsp brown sugar
    13.5 oz can mixed beans, rinsed
    4 thick slices whole grain bread, toasted, to serve
    1 None large avocado, sliced, to serve
Preparation
    Heat oil over medium heat, add onion and garlic and cook for 5 mins, or until soft. Add bacon and cook for 2 mins, or until lightly browned and cooked. Add tomato paste, diced tomato, sugar and beans. Bring to a boil then reduce heat and simmer, stirring occasionally, for 8 mins, or until sauce thickens. Serve warm with toast and avocado.
