Chicken, Corn And Avocado Tacos - cooking recipe

Ingredients
    1 tbsp oil
    1 None red pepper, deseeded, finely chopped
    1 None onion, finely chopped
    1 lb ground chicken
    1 x 1 oz packet taco seasoning mix
    12 oz canned sweet corn, rinsed
    1 None avocado, pit removed, flesh finely chopped
    8 None taco shells
    5 oz shredded lettuce
    4.24 oz cheddar, grated
    None None Tomato salsa, to serve
    None None Sour cream, to serve
Preparation
    Preheat oven to 350\u00b0F.
    Heat oil in a large frying pan on high. Saute pepper and onion for 3-4 mins, or until tender. Add chicken. Brown well for 4-5 mins, breaking up lumps with the back of a spoon.
    Add taco seasoning, stirring well. Mix in sweet corn and 3/4 cup water. Bring to a boil. Reduce heat and simmer for 2-3 mins, or until slightly thickened. Gently stir in avocado.
    Meanwhile, place taco shells on a baking sheet and warm in the oven according to package instructions.
    Fill tacos with chicken mixture. Top with lettuce, cheese, salsa and sour cream.
