Open Faced Honey And Goat Cheese On Rye Sandwich - cooking recipe
Ingredients

1 tsp olive oil
2 slices rye bread
3 1/2 oz goat cheese
1 1/2 tbsp honey
4 sprigs thyme, leaves picked and chopped
1 None tomato, deseeded and chopped
None None Small handful of arugula, to serve
Preparation

Heat the oil in a large saute pan, add the bread and toast each on one side.
In a bowl, mix together the cheese, honey, and half the thyme. Season to taste with salt and freshly ground black pepper.
Fill the sandwich (toasted sides on the inside) with the goat cheese mix, the chopped tomato, arugula and the remaining thyme.
