Quince Bars - cooking recipe

5 1/4 cups all-purpose flour
1 cup granulated sugar
1 cup butter, softened
2 None eggs
1 cup 2% or whole milk
1 tsp active dry yeast
1/4 cup lemon juice
2/3 cup orange juice
4 None quince, peeled, halved and cored, sliced lengthwise
3/4 cup cranberry sauce
3 tbsp poppy seeds
None None whipped cream, to serve
Preparation

Combine 3 1/2 cups flour, 1/4 cup sugar, 5 1/2 tbsp butter, 1 egg and a pinch of salt. Gently heat milk until lukewarm, add yeast and dissolve. Add to batter then mix for 2 mins until smooth. Cover and set aside in a warm place for 30-40 mins to proof.
Meanwhile, caramelize 5 1/2 tbsp sugar with 2 tbsp water. Deglaze with lemon and orange juice. Add sliced quince and cook for 8-10 mins, stirring occasionally. Remove quince and set aside to cool.
Preheat oven to 400\u00b0F. Grease and flour a 13x15 inch rimmed baking pan. Roll out pastry on a floured surface then transfer to prepared pan. Cover and let rise in a warm place for 20 mins. Make small indentations with a spoon and fill with cranberry sauce. Arrange quince slices on top. Mix remaining flour, sugar, butter, egg and poppy seeds, knead by hand then sprinkle over top and bake for 30 mins. Remove and let cool for 45 mins. Serve with whipped cream.
