Meatballs And Veggies In Coconut Curry - cooking recipe

Ingredients
    1 lb ground pork
    1 small onion, finely chopped
    2/3 cup plus 2 tbsp korma curry paste
    1 cup soft fresh breadcrumbs
    7 oz sweet potatoes, peeled and grated
    1 None egg, lightly beaten
    2 tbsp chopped cilantro, plus additional leaves for garnish
    1 tbsp vegetable or olive oil
    1 can (14 oz) coconut milk
    1 pkg (16 oz) frozen mixed vegetables
    3 cups cooked basmati rice, to serve
Preparation
    Mix ground pork, onion, 2/3 cup curry paste, breadcrumbs, sweet potatoes, egg and cilantro in a large bowl. Using your hands, shape mixture into 8 patties. Heat oil in a large skillet on medium heat. Add patties; cook 2 mins per side or until browned. Reduce heat to low. Cook for 8-10 mins or until cooked through.
    Meanwhile, place coconut milk and 2 tbsp curry paste in a small saucepan on medium heat. Cook and stir for 5 mins or until heated and reduced slightly.
    Place vegetables in a large microwaveable dish. Microwave on high (100%) for 3-4 mins or until heated through. Serve patties with rice, veggies and coconut sauce. Sprinkle with cilantro leaves.
