Guacamole With Bacalao (Salt Cod) - cooking recipe

Ingredients
    5.25 oz bacalao (salt cod), soaked overnight in water or milk then rinsed thoroughly
    2 None avocados, peeled, pitted and pulp removed
    1-2 None limes, juiced
    1 clove garlic, peeled and finely chopped
    1 None spring onion, trimmed and sliced
    3 sprigs fresh parsley, 2 sprigs finely chopped, 1 sprig for garnish
    None None pink peppercorns, for garnish
Preparation
    Simmer fish in water for 10-12 mins. Remove from heat and allow to cool. Tear fish into small pieces.
    Mash the avocado pulp with a fork. Stir in lime juice, garlic, spring onion and chopped parsley until well combined. Season then add fish. Spoon guacamole into glasses and garnish with parsley. Sprinkle with pink peppercorns.
