Spaghetti, Mushroom And Prosciutto Frittata - cooking recipe
Ingredients

2 tbsp olive oil
1 None leek, trimmed, washed, finely sliced
1/3 lb button mushrooms, finely sliced
6 slices prosciutto, sliced into strips
1 clove garlic, peeled and crushed
6 oz frozen peas
7 None large eggs, whisked
3 oz Parmesan cheese, grated
1/4 lb spaghetti, cooked and chopped
2 tbsp fresh mint, chopped
None None salad and crusty bread, to serve
Preparation

Preheat the oven to 350\u00b0F. Lightly grease 4 5-inch individual pie pans.
Heat the oil in a large frying pan on high. Saute the leek, mushrooms, prosciutto and garlic for 2-3 mins until tender. Add peas and remove from heat. Stir in the eggs, cheese, spaghetti and mint. Season to taste. Divide the mixture evenly between the prepared pans. Bake for 10-12 mins until set. Serve with salad and crusty bread.
