Spicy Beef Burritos - cooking recipe

Ingredients
    1 1/2 lbs ground beef
    1 None small onion, chopped
    2 cloves garlic, chopped
    1 tsp ground coriander
    1 tsp ground cumin
    None Dash hot sauce (optional)
    1/4 cup light olive oil
    2 None tomatoes, seeded, finely diced
    2 tbsp cilantro, chopped, plus extra to serve
    1 None red pepper, cut into strips
    8 None large burrito tortillas
    None None Salad greens, to serve
    None None Sour cream, to serve
Preparation
    Combine beef, onion, garlic, spices and hot sauce, if using, in a large bowl and mix well. Heat 2 tsp oil in a large frying pan on medium. Cook beef mixture, stirring to break up any lumps, for 5 mins, until lightly browned. Add tomato and cilantro. Reduce heat to low, cover and simmer for 15 mins, until tender.
    Meanwhile, heat remaining oil in a pan on high. Cook red pepper for 5 mins, until tender. Heat tortillas according to packet directions.
    Top tortillas with salad greens, cilantro, spicy beef mixture, red pepper and sour cream. Wrap up to enclose filling and serve.
