Spiced Banana Muffins - cooking recipe

Ingredients
    1/2 cup low fat plain yoghurt
    3 tbsp honey
    2 tbsp vegetable oil
    1 None egg, lightly beaten
    1 tsp vanilla extract
    2 large ripe bananas, mashed
    1 1/2 cups self-rising flour
    1/4 tsp baking soda
    1 tsp ground cinnamon, plus additional, to sprinkle
Preparation
    Preheat the oven to 350\u00b0F. Grease a 6-cup Texas muffin pan.
    Mix yogurt, honey, oil, egg and vanilla in a large bowl. Whisk in banana. Sift flour, baking soda and cinnamon into medium bowl. Fold into batter, taking care not to over-mix. Batter should still be a little lumpy. Spoon into prepared pan. Sprinkle with additional cinnamon.
    Bake 25-30 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on a wire rack.
