Spicy Peanut Turkey Meatballs With Mango Salad - cooking recipe

Ingredients
    750 g turkey mince
    2 None spring onions
    2-3 tsp curry paste
    75 g roasted peanuts, chopped
    7 tbsp oil
    2 tbsp light balsamic vinegar
    2 tbsp orange juice
    1 tbsp honey
    1 tsp mustard
    1 large red bell pepper, sliced
    2 bunches rocket
    1 ripe mango, cut into bite sized pieces
Preparation
    Mix together the ground turkey, green onions, curry paste and 2/3 of the peanuts. Season with salt and pepper, mix well then form into 12 balls.
    Heat 2 tbsp oil in a frying pan and fry the balls for about 8-10 minutes until browned all over and cooked through.
    For the dressing, mix the vinegar with orange juice, honey and mustard. Season with salt and pepper then beat in 5 tbsp oil. Mix in a bowl with the peppers, arugula and mango.
    Spread the salad on a plate, top with meatballs and garnish with remaining peanuts.
