1 1/2 lb winter squash, peeled, cut into matchsticks
4.5 oz green beans, trimmed
1/2 cup unsalted cashews, toasted
6 None radishes, trimmed, scrubbed, thinly sliced
3 tbsp fresh cilantro, coarsely chopped
2 tbsp tamari soy sauce
2 None spring onions, thinly sliced
1 clove garlic, minced
Preparation
-
Preheat oven to 400\u00b0F.
Fill a large roasting pan with 3 cups water. Lightly spray a wire rack with oil. Place pork on rack over water in pan. Bake for 45 mins. Let cool slightly. Whisk hoisin sauce with 1 tbsp sesame oil. Brush pork with 1/3 of the hoisin mixture. Bake for 45 mins, basting with remaining hoisin mixture and flipping every 15 mins, or until glazed, sticky and cooked through. Sprinkle with sesame seeds and bake for 5 mins, or until seeds are toasted. Let cool slightly.
Meanwhile, place squash on a baking tray. Lightly coat with oil. Bake for 15-20 mins, or until browned and tender. Let cool slightly.
Cook green beans in boiling water for 3 mins, or until just tender. Drain. Run under cold water until cool. Toss with squash, cashews, radishes, cilantro, soy sauce, remaining sesame oil, onions and garlic. Serve with ribs.
