Pork, Pasta And Broccoli Bake - cooking recipe

12 oz macaroni or other small pasta shapes
2 cups small broccoli florets
1 cup frozen peas
1 tbsp vegetable oil
4 None thin pork cutlets
2 tbsp butter
2 tbsp all-purpose flour
2 1/2 cups reduced-sodium vegetable broth
6 oz cheddar cheese, shredded (1 1/2 cups)
2 tbsp flaked almonds
None None Parsley sprigs, for garnish

Preheat the oven to 400\u00b0F. Cook the pasta according to the package directions until almost tender. Meanwhile, cook the broccoli in boiling salted water for 3-4 mins. Add the peas and cook for 1 min, then drain the vegetables.
Heat the oil in a large skillet over medium-high heat. Add the pork and brown for 1-2 mins per side. Drain the pasta.
Melt the butter in a large saucepan, then stir in the flour and cook, stirring, 1 min. Gradually mix in the broth and simmer, stirring, for 4-5 mins until thickened. Mix in the cheese and remove from the heat. Mix in the pasta, broccoli and peas, then transfer the mixture to a baking dish. Nestle the pork into the sauce, sprinkle over the almonds and bake for 30-35 mins until hot. Garnish with parsley and serve.
