Ingredients

1 1/4 cups self-raising flour, sifted
2 tbsp sugar
1 1/4 cups buttermilk
5 None passion fruits, pulp scooped out
2 None large eggs
7 tbsp butter, softened
Preparation

Combine flour and sugar in a bowl and make a well in center. Whisk together buttermilk, 4 passion fruits and eggs in a separate bowl. Pour into well and whisk until smooth.
Heat a lightly greased non-stick frying pan on medium. Add 1 1/2 tbsp batter for each pancake, allowing room for spreading. Cook for 2 mins, or until bubbles appear and begin to pop. Turn and cook for 1 min, or until golden. Repeat with remaining batter.
Mix the remaining passion fruit with the butter. Serve pancakes with a dollop of butter on top.
