Butternut Squash With Bacon - cooking recipe

3 tbsp butter
3 slices bacon, chopped
1 clove garlic, crushed
1 3/4 lbs butternut squash, peeled, seeded and cubed
4 None green onions, sliced
Preparation

Melt 1 tbsp of the butter in a large skillet on medium-high heat. Add bacon and garlic and cook until lightly browned. Remove from pan; drain on paper towels.
Wipe skillet clean. Add 1/2 cup water to skillet and bring to a boil. Add squash; cover and cook on medium-low heat about 10 mins or until squash is just tender and the water is almost evaporated. Return bacon mixture and remaining 2 tbsp butter to the pan. Cook, uncovered, on medium heat, for about 10 mins, stirring occasionally. Add green onions and season to taste with salt and pepper; toss gently.
