Spicy Chicken With Corn Salsa - cooking recipe

Ingredients

1 lb chicken tenders
2 oz taco seasoning mix
1 tbsp oil
None None Salsa
3/4 cup canned sweet corn kernels, drained
1 None small avocado, diced
1 None medium tomato, diced
1 None shallot, finely chopped
1/2 None small red onion, finely diced
1 None lime, zested and juiced
None None steamed new potatoes, to serve
None None sour cream, to serve

Preparation

Coat chicken in seasoning mix. Heat oil in a frying pan over medium heat. Cook chicken for 3-4 mins per side, until cooked through.
Meanwhile, for the salsa, combine salsa ingredients in a bowl. Serve chicken with salsa, potatoes and sour cream.
