Cardamom Panna Cotta With Apricot Sauce - cooking recipe

Ingredients
    1 1/4 cups heavy cream
    1 1/4 cups milk
    1/3 cup granulated sugar
    6 None cardamom pods, crushed
    1 1/2 tbsp powdered gelatin, bloomed in 2 tbsp cold water
    1 lb fresh apricots, pitted, sliced
    None None chopped pistachios, to decorate
Preparation
    Bring cream, milk, 1/4 cup sugar and cardamom pods to a boil. Simmer for 5 mins. Remove from heat. Stir in gelatin until melted. Strain. Pour into 4 (6 oz) ramekins. Chill for at least 3 hours until set.
    Meanwhile, simmer apricots and remaining sugar for 2 mins, until just tender. Let cool. Puree 1/3 of apricots then mix in remainder. Chill.
    Unmold panna cotta onto 4 serving plates. Spoon apricot sauce around and sprinkle with pistachios.
