Creamy Shrimp And Fish Pie - cooking recipe

Ingredients
    4 1/3 cups milk, 1/3 cup warmed
    1 None medium leek, thinly sliced
    3.5 oz celery, trimmed, thinly sliced
    1 lb skinless firm whitefish fillets, cut into 1 inch pieces
    1 lb skinless salmon fillets, cut into 1 inch pieces
    2 3/4 lb Desiree potatoes
    16 tbsp butter
    1/2 cup all-purpose flour
    4 oz grated Cheddar cheese
    1 lb raw shrimp, peeled
    1 lb smoked fish (such as trout, haddock or cod), skin removed, flaked
    2 tbsp fresh dill, finely chopped, plus 2 sprigs
    2 tsp lemon zest
    1 tbsp lemon juice
Preparation
    Preheat oven to 350\u00b0F.
    Bring 4 cups milk, leek and celery to a simmer. Add fish and simmer over low heat for 10 mins, or until fish is cooked through. Strain milk mixture over a large bowl. Reserve. Transfer fish and vegetables to a separate medium bowl.
    Meanwhile, to make the mashed potatoes, boil, steam or microwave potatoes until tender. Drain. Mash potato with 1/3 cup warmed milk and 7 tbsp butter in a large bowl until smooth. Season to taste.
    Heat 6 tbsp butter in a saucepan over medium-high heat. Add flour and cook, stirring, until mixture thickens and bubbles. Gradually add reserved milk. Whisk until mixture boils and thickens. Add cheese and stir until smooth. Add cooked fish, raw shrimp, smoked fish, finely chopped dill, lemon zest and lemon juice. Season.
    Transfer mixture to a large ramekin. Top with mashed potatoes and dot with remaining butter. Bake for 45 mins, or until heated through and mashed potatoes are golden. Serve topped with extra dill sprigs.
