Beef And Bacon Sliders - cooking recipe

2 large Granny Smith, unpeeled
1 cup finely shredded green cabbage
1/4 cup small fresh mint leaves
1 None green onion, thinly sliced on the diagonal
1/3 cup coleslaw dressing

5 tbsp olive oil
5 slices bacon, cut into matchsticks
1 small red onion, finely chopped
1 1/3 lbs ground beef
2 tbsp finely chopped fresh flat-leaf parsley
12 None slider rolls or dinner rolls, split
1 cup grated mozzarella cheese

For the green apple coleslaw, cut the apple into matchsticks. Place in a large bowl with the cabbage, mint leaves, onion and dressing and season to taste. Toss gently to combine. Cover and refrigerate until ready to serve.
For the sliders, heat 1 tbsp of the oil in a large skillet on high heat. Cook the bacon and onion, stirring occasionally, for 6 mins or until the bacon is browned and the onion is soft. Drain on a paper towel, then cool completely.
Combine the ground beef, bacon mixture and parsley in a large bowl. Season. Divide into 12 equal portions and shape into 4-inch patties (or slightly larger than the bread rolls). Refrigerate for 30 mins or until firm.
Heat 2 tbsp of the oil in a large skillet on medium-high heat. Add half the patties and cook for 3 mins each side. Drain on paper towels. Repeat with the remaining oil and patties.
Preheat the broiler to high. Place the roll bottoms, cut-side up, on baking pan. Top with the patties and sprinkle with cheese. Broil for 2 mins or until the cheese melts.
Top the patties with coleslaw and sandwich with the roll tops. Use a toothpick to secure the sliders for serving. Place on a large platter and serve immediately.
