Turkey With Gnocchi, Broccoli And Cream Sauce - cooking recipe

Ingredients
    1 lb refrigerated gnocchi
    3 tbsp oil
    2 oz ham, diced
    1 cup heavy cream
    1/2 cup vegetable stock
    1-2 tsp cornstarch
    4 x 1/4 lb turkey cutlets, tenderized
1 head broccoli, divided into small florets
    1 tbsp butter
    2 tbsp sliced almonds
    6 None chives, thinly sliced
Preparation
Cook the gnocchi according to the package instructions, drain and rinse with cold water.
To make the cream sauce, heat 1 tbsp oil in a saucepan and saute the ham for 1-2 mins then pour in the cream and stock. Mix the cornstarch with a little cold water, stir it into the mixture and simmer for about 8 mins.
Meanwhile, heat 2 tbsp of oil in a large skillet and brown the turkey cutlets for about 3 mins each. Remove from the heat and keep warm.
To make the broccoli, boil it in salted water for about 5 mins. Melt the butter in a saucepan and cook the almonds until golden brown. Drain the broccoli and toss it in the almond butter.
To assemble and serve, stir the gnocchi and 2/3 of the chives into the cream sauce and season it to taste. Transfer the turkey, broccoli and gnocchi to 4 plates and sprinkle with the remaining chives.
