Salmon And Pea Salad With Potatoes And Fresh Dill Dressing - cooking recipe

Ingredients
    1 1/4 lb potatoes
    4.25 oz frozen peas
    3 oz snow peas
    3 oz sugar snap peas
    1/4 None lemon, thinly sliced
    1/4 tsp black peppercorns
    1 1/4 lb salmon fillet
    3 oz baby spinach
    1/4 cup fresh mint leaves
    None None Dill Dressing
    3/4 cup extra virgin olive oil
    1/3 cup lemon juice
    1 tbsp dijon mustard
    2 tsp granulated sugar
    1 tbsp fresh dill, coarsely chopped
Preparation
    To make the dill dressing, combine all ingredients and mix until combined.
    Steam potatoes until almost tender. Add peas, snow peas and sugar snap peas to boiling water. Blanch for 1 min. Drain. Run peas under cold water. Drain. Halve snow peas and sugar snap peas lengthwise. Slice potatoes and toss with 1/3 cup dill dressing.
    Meanwhile, heat 2 cups water with lemon and peppercorns. When water is warm, add salmon. Simmer, covered, until salmon changes color and is rare-medium in the center. Drain. Let cool slightly then flake into chunks.
    Arrange potato, peas, salmon, spinach and mint on serving plates. Drizzle with remaining dill dressing.
