Cashew, Chili And Cilantro Dip - cooking recipe

Ingredients
    1 cup toasted cashew nuts
    1 bunch cilantro, chopped
    1/4 cup sun-dried tomatoes, plus 1/4 cup reserved oil
    1/4 cup shaved Parmesan cheese
    2 tbsp lime juice
    1 tbsp extra virgin olive oil
    1 None long red chili pepper, seeded and chopped
Preparation
    Reserve a little of the cilantro and chili pepper for garnish. Combine all remaining ingredients in a food processor. Process until well chopped. Season to taste.
    Top with reserved cilantro and chili pepper. Serve with pita chips.
