Pork Souvlaki With Potato Wedges And Coleslaw - cooking recipe

Ingredients
    9 tbsp olive oil
    1 None lemon, peel grated and lemon juiced
    3 stems oregano, leaves picked and chopped
    2 cloves garlic, chopped
    1 3/4 lbs boneless pork chops, cubed
    1/4 cup balsamic vinegar
    1 tsp cumin seeds
    1/2 tsp sugar
    1 None green cabbage (about 2 lbs), thinly sliced
    1 None onion, finely chopped
    5 oz roasted red pepper, sliced
    1 3/4 lbs potatoes, cut into wedges
Preparation
    Preheat the oven to 400\u00b0F. Mix 3 tbsp of the oil, lemon peel and juice, oregano and garlic in a large bowl. Add the pork and toss to coat well. Refrigerate for 6 hours to marinate.
    For the coleslaw, mix the vinegar, 3 tbsp of the oil, cumin and sugar in a large bowl. Add the cabbage, onion and peppers; toss to coat well. Season with salt and pepper. Refrigerate until ready to serve.
    Place the potatoes on a baking pan. Drizzle with the remaining 3 tbsp oil and season with salt and pepper. Bake for 30 mins or until golden.
    Thread the marinated pork onto skewers. Heat a grill pan to medium heat. Cook the skewers for 8-10 mins, turning occasionally, until cooked through.
    Serve the potatoes and pork skewers with the slaw on the side. Serve with tzatziki, if desired.
