Salmon Curry - cooking recipe

Ingredients
    2 tbsp oil
    1 3/4 lbs skinless salmon fillet, cut into cubes
    1 None onion, peeled and diced
    1 None red chili pepper, deseeded and finely chopped
    1 lb carrots, peeled and diced
    8 None spring onions, sliced
    2 tsp curry powder
    1 2/3 cups vegetable stock
    2 tsp cornstarch, mixed with 2 tbsp water to a smooth paste
Preparation
    Heat the oil in a saucepan and saute the salmon, turning, for 3 mins. Remove from the pan and set aside on paper towels. Add the onion to the pan and saute until softened. Add the chili, carrots, spring onions and curry powder. Add the stock and simmer for 15 mins. Stir in the cornstarch. Add the fish and simmer for 2 mins. Season with salt and black pepper.
