Egg And Cheese Tostadas - cooking recipe
Ingredients

4 None flour tortillas
7 oz canned chopped tomatoes
1 tsp paprika
1 tsp chili powder
2 tsp olive oil
1 None onion, peeled and cut into strips
1 None green pepper, deseeded and cut into strips
1/2 cup fresh flat-leaf parsley, chopped
4 None eggs
7 oz Monterey Jack, shredded
3 oz jalapeno peppers (from a jar), sliced
Preparation

Preheat the oven to 425\u00b0F. Line 2 baking sheets with parchment paper and place 2 tortillas on each. In a bowl, mix the tomatoes, paprika and chili powder. Spoon over the tortillas.
Heat 1 tsp oil in a frying pan and fry the onion and peppers for 3 mins, turning. Season with salt and arrange over the tomato sauce. Sprinkle with parsley.
Heat 1 tsp oil in a non-stick frying pan and fry the eggs to your liking. Lay an egg on each tortilla and sprinkle with the cheese. Bake for 5 mins. Sprinkle over the jalapenos before serving.
