Beef With Beans And Peppers - cooking recipe

Ingredients
    2 tbsp olive oil
    12.25 oz sirloin steak, trimmed, sliced into 3/8 inch wide strips
    1 None large red onion, sliced
    1 None red pepper, seeded, cut into chunks
    1 None orange pepper, seeded, cut into chunks
    1 clove garlic, minced
    2 None large oranges, zest removed with a vegetable peeler then sliced, juiced
    2 cups beef stock
    2 tbsp cornstarch, mixed with a little water to make a slurry
    8 oz runner beans, trimmed, sliced
Preparation
    Heat oil in a large pan. Sear steak over high heat, stirring, for 4-5 mins, until browned. Add onion, peppers and garlic. Cook for 3-4 mins, until softened. Add orange juice, beef stock and cornstarch slurry. Bring to a boil, stirring, then cover and simmer for 15 mins. Add beans and orange zest. Simmer for 8-10 mins, or until steak and beans are tender. Serve hot.
