No Bake Cherry Coconut Bars - cooking recipe

Ingredients
    14 oz can sweetened condensed milk
    7 oz shortbread cookies, finely crushed
    1/2 cup desiccated coconut
    3 1/2 oz candied cherries, chopped
    3/4 cup sliced almonds, toasted
    1/2 cup coconut oil, melted, cooled
    None None Icing
    2 1/2 cups powdered sugar, sifted
    1 tbsp butter, softened
    2 tbsp water
    None None Pink food coloring
Preparation
    Lightly grease an 11 x 7-inch baking pan. Line base and two long sides with parchment, extending paper 1/2-inch above pan edge.
    In a large bowl, combine condensed milk, cookies, coconut, cherries and almonds.
    Add coconut oil to mixture, blending well. Press into prepared pan and chill for 20 minutes until firm.
    For the Icing: Combine powdered sugar and butter in a heatproof bowl over simmering water. Add water and a few drops of food coloring, and stir until smooth. Spread over mixture in pan. Chill for 30 minutes until firm. Cut into squares.
