Shrimp, Tomato And Basil Pasta - cooking recipe
Ingredients

2 tbsp olive oil
1 2/3 lbs jumbo shrimp or king prawns, peeled, tail intact, deveined
1 None onion, sliced
2 cloves garlic, crushed
1 None small chili, chopped
1 x 14 oz can cherry tomatoes (or crushed tomatoes)
1/2 cup tomato puree
1/2 cup white wine
2 tsp brown sugar
9 oz tagliatelle
2/3 cup basil
None None Parmesan, shaved, to serve
Preparation

Heat half of the oil in a large frying pan on high. Add shrimp and cook for 2-3 minutes, until they change color. Remove from pan.
Heat remaining oil in same pan on high. Saute onion, garlic and chili for 1-2 minutes, until onion is tender. Stir in tomatoes, tomato puree, 1/2 cup water, wine and sugar. Season to taste. Reduce heat to low and simmer for 10 minutes.
Meanwhile, cook pasta according to package instructions. Return to pan. Toss sauce and shrimp with pasta over low heat until well combined, 1-2 minutes. Serve topped with basil and Parmesan.
